Warming Vegan Thoughts…and some Orange Maple Pecan Coffee Cake

On a rainy morning, there is nothing quite like a hot cup of tea and a piece of vegan coffee cake. As I breathed in and out through my yoga class this morning, listening to the rain on the tin roof, I have to admit, the thought occurred to me once or twice. 🙂

coffeecake1_smToday I have a recipe for you that I made up yesterday as part of my cooking program. I was inspired to photograph it and take pictures for you because it turned out JUST RIGHT the first time. How often does that happen?! I’ve discovered that when I’m creating baked goods, it’s not that often.

This is a warm, comforting coffee cake that dispels all rumours that vegan baking is bland or dry. I think I need to take samples in to non-vegan coffee shops everywhere. 🙂 Without further adieu…Orange Maple Pecan Coffee Cake.@veganem coffee cake

Orange Maple Pecan Coffee Cake

ingredients

  • 1/4 cup walnut oil
  • 1/4 cup coconut oil
  • 3/4 cup maple syrup
  • 1 cup pure orange juice
  • 2 cups organic sprouted spelt flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp orange zest oil (or zest of 1-2 oranges)
  • 1 tsp lecithin
  • 1 tsp vanilla
  • 1/2 cup pecans

topping

  • 1/4 cup pecans
  • 1/4 cup coconut sugar
  • 1 tbsp coconut oil
  • pinch salt

directions

1) prepare a 9-inch round cake pan and pre-heat oven to 350F; pulse together topping ingredients and put aside

2) in a food processor beat oils, maple syrup and orange juice together until well mixed; add lecithin, zest oil/zest and vanilla and beat again

3) combine dry ingredients in a bowl, sifting if necessary, and mix well

4) add wet ingredients to dry and mix just until combined

5) place batter in prepared pan, and top with topping

6) bake for approximately 30 minutes

7) cool, cut and enjoy!
