Well, I finished my cleanse a few days back, and although I thought I would be running to the coffee pot, or baking up some cookies, to my surprise that just didn’t happen. Something I really love about #summersolsticecleanse2015 is that it motivated me to leave it, and keep eating really healthily!
For dinner on the first day after the cleanse I made something I had been craving. This is one of my favorite grain salads: Quinoa-Spinach. It’s SO delicious I can almost (almost!) eat a whole batch on my own. Well, I didn’t do that – I eased in 🙂
- 2 cups water
- 1 cup quinoa
- 2 roma tomatoes, diced
- ½ cup shredded spinach (I usually use a bit more)
- ½ cup finely chopped onion
- 2 tbsp lemon juice
- 2 tbsp olive oil
- ½ tsp salt
- 1-2 avocadoes, diced
Combine water and quinoa; bring to a boil. Reduce heat, cover and simmer for 15 minutes, or until liquid is gone. Spread to cool. Combine vegetables. Mix lemon juice, olive oil and salt, and drizzle over tomatoes, spinach, and onion – add to cooled quinoa. Just before serving add avocado.
